Lettuce wraps – not for rabbits!

92% of people who hear of anything to do with lettuce automatically droop their shoulders and sigh. (Ok, these stats are totally made up but you get the idea!) What I want to show you here is that lettuce doesn’t have to be boring, it could be just the thing you’re looking for.

I made these lettuce wraps in my office one day (while I worked in advertising). They’re a great way to re-use meat from dinner the night before and you can get pretty inventive with what you do.

The meat I used was lamb and it was just cooked in a homemade spicy sauce, but obviously you can use anything. Chicken, beef, pork, fish, and you have your pick with seasoning choices. If you’re a fan of fajita mix then this is just the perfect opportunity to enjoy some low carb fajitas and you can load up with great tasting veggies! I love adding grated carrot for a pop of colour and a nice juicy hit. As I said, experiment and see what you can come up with!
